Combine all ingredients in a shaker with ice. Shake and strain into a chilled coupe.
I was in the mood for something refreshing, but with a hint of spice so I decided to whip up a fall inspired daiquiri. To add some fall spice to the cocktail it uses Allspice Dram. If you haven’t had it before, allspice dram (AKA pimento dram) is a strongly flavored allspice liqueur. This stuff can really overpower a drink, so don’t go overboard when you use it in a drink.
I’m a fan of using maple as a sweetener, especially for fall drinks. Please, for your own sake, do not use a fake maple syrup. I'm from New England and our office is there too, so I’m all about using Pure Vermont Maple syrup. However, as long as you can get the pure stuff, it’s all good with me.
I chose to use a richly flavored Demerara Rum like El Dorado 12 Year rum in this daiquiri to accentuate the flavors in the maple syrup. If you don't have that on hand, I'd suggest something richly flavored that has spent a significant amount of time in a barrel.
I used two hefty dash of angostura bitters to help bring out more of the spice notes. If you had Tiki Bitters on hand they would be great to use as well.
