I've been trying to drink more mezcal recently and I'm always looking for drinks to use it in. One of my favorite cocktails for the summer is the Paper Plane and I thought it would be a drink to try with mezcal.
For those unfamiliar with mezcal, it's a Mexican spirit that is made from roasted agave. It has an intense and smoky flavor that is unique to mezcal. I like the addition of the smoky flavor with the subtle bitterness of the Aperol and Amaro Nonino. Make this drink next time you're looking for something refreshing and complex, it'd be perfect for a scotch drinker wanting to branch out to other spirits.
